Corsican goats—a symbol of island life and cuisine
The Walking Society
Corsican goats are tough, resilient creatures that have lived on the island for thousands of years. Nomadic animals that venture long distances in the perilous mountain heights, the goats adapt to the seasons, climbing the highest mountains during summer for relief from the heat.
As winter falls, they return to lower altitudes where the females give birth and shepherds collect their milk to make cheese. Goat's cheese, with its rich distinct flavor and creamy texture, is a familiar delicacy in Corsica.
